Oh my goodness when I found this little recipe a few months back, I knew we just had to try it, we LOVE shrimp and who doesn’t love twice baked potatoes?!.., you will not be disappointed.. I pinky promise!! these are wonderful! I make them at least twice a month now! usually with salad, garlic bread and some kind of fruit for the kids!…. delish!
large Idaho baking potatoes
Vegetable oil, for coating
1 stick of butter
2 cups grated cheddar cheese
2 cups grated Monterey jack cheese
2 cups sour cream
salt & pepper, to taste
1 lb. shrimp, peeled & deveined {I used frozen from Costco…thawed out, of course!}
kosher salt, optional
paprika
